Bitters have been making a resurgence in bars and restaurants, and are considered an essential, for top of the line cocktails. There are potable bitters which are drinkable and non-potable which are more like a spice.
Which makes sense, because they are an extract of herbs and spices, with alcohol added to pull out the flavor. Before prohibition, there were many varieties of bitters. Bitters were also used for medicinal purposes, such as, to calm an upset stomach.
There are many types of bitters and they can be used as a flavor enhancer to highlight or smooth down a drink. In fact original cocktails usually required bitters.
So don’t be afraid to add some bitters into your cocktail shaker when you are experimenting with the perfect cocktail and all of it’s variations.
